Default Contacts 'display as' keeps showing email address even when I dele

I'm using Outlook 2007 recently upgraded from Outlook 2003 contacts.
I don't like email addresses showing in emails, so I have always written
'display as' with name only in Contacts. However, Outlook 2007 has added the
email address in 'display as' for everyone. When I go in to delete the email
address, SAVE and Close - and go back to check, nine times out of ten, the
email address is back in there. Very frustrating.
Is this a known problem? Is there a fix? I just want 'display as' to
simply reflect what I put in there - not what Outlook decides to put in there.

Thanks.

The email address is "back in" where? Where are you deleting the address and
where is it appearing that you don't want it? Are you modifying the Email
Display As field? Are you deleting any reference that might remain in your
autocompletion cache?

The email address is "back in" 'Display As'. I am modifying the Contacts
'display as' field - I delete the email address leaving what I want to
show..e.g the NAME only of the contact. Can't imagine that I'm leaving any
autocompletion cache...nothing in tools etc. gives me any choice for
formatting of 'display as'. Where else might I find something like
autocompletion overriding what I am trying to do?
Thanks

Use a list view of your Contacts to make sure you are actually modifying the
"E-mail Display As" field.
Delete any reference to this Contact from the autocompletion cache.
