Default disappearing user defined fields

In the table view of Contacts, when I drag the fields to
the field chooser box, some of them do not drop in and
cannot be located anywhere. Where did they go and how can
I recover them?

They might have been defined only on individual items or a custom form and
not in the Contacts folder itself. You can add them with the Field Chooser's
New button.
