When you schedule resources in Outlook (2007 with Exchange 2007) can you
change the default "show as" field to show "free" instead of "busy"?
Currently, the only way is to manually choose "free" or check "All day event"

No, you can't change the default. Timed appointments will always be Busy,
all day events are always free unless you change them.
