Default All option for pull down menu in form

In the form I created that allows users to query for
records, I use two date fields (setting a constraint on
the timeframe for the records retreived) and two pull down
menus that specify the "Jurisdiction" and "Zone" of the
data received.

Both the "Jurisdiction" and "Zone" fields are pull down
menus referencing text data from their respective tables
("tbl_Jurisdiction" and "tbl_Zone"). Each table has
approximately 8 choices (for example, Zone has options
like "Southwest Area" "Northwest Area" "Central Area"
etc...). Neither table has an "All" option that would
allow users to get data for all zones and/or all
jurisdictions for a given range of dates.

What is the simplest way to do this (I am no access
wizard)?
