I am a novice user, but surely what I want isn't so
unusual! I have been searching and trying different things
for hours and have decided I must be going about it all
wrong!

I have an SQL database that I want to display in Visio - I
do not want to update the database from Visio - I just
want to get the database tables and arrange them in Visio
so they fit on 8.5 x 11 paper. I have one table in
particular that spans 3 pages when I reverse engineer the
database and it puts the fields in an entity shape. I
would really like to arrange the fields in columns.

I would really appreciate some guidance on this. I am
totally fustrated, but don't want to give up.

Not possible with the out-of-the-box solution.
Sounds like you have a very large table.

You can resize the page of course...
