A3 is a metric paper size but Excel seems to allow only A4, A6 and B5 metric
sizes.
How do you get custom sizes?

Default How do you get an A3 worksheet in Excel

From a Google search of Excel newsgroups it seems Excel gets it allowed
paper sizes from the printer driver. So if OP has a printer that allows
paper as big as A3 then his Excel should have it listed in File | Page
Setup -Page tab-Paper size dialog.

Default How do you get an A3 worksheet in Excel

A4 is the normal paper size used in Europe (approx 8.25" x 11.67") - A3
is twice the size (area).

In response to the OP, this depends on whether your printer will
support this size of paper. Go to File | Page Setup | Page (tab) and
select Options... which will take you to your printer settings. Select
as appropriate.

Excel will allow A3 if your printer and its driver will do so.
