Default Outlook Default Editor

In Outlook 2007, the Mail Format tab of the Options Dialogue Box shows the
selection for using Word as the default editor, but it is watered, and unable
to be selected. How do I make this selection available?

You don't. Outlook 2007 is the first version that uses a unified editor
(meaning no choice between Outlook built-in vs. Word editor). Think of the
editor in Outlook 2007 based on/around Word 2007.
