Default different chapter titles and specific page numbering

I've got a big document that has several different chapters (or
sections). I need to be able to have differnet headers for all the
chapters (for example, chapter 1's header is "In the beginning",
chapter 2 is "God created man", etc...). The way I have it right now,
it maintains the same chapter header throughout, and if I change it in
one chapter or section, it applies the chang throughout as well. How
can I accomplish this?

Also, the document has specific page numbering... is there a way I can
specify the individual page numbers in the order I specify, but still
have it appear in the footer as a page number?
