Default Upgrade from Office 2003 to 2007 removing icons and toolbars

We are using SCCM SP1 to deploy Office Ent Suite + VISIO + Project to
desktops, overwriting/upgrading existing 2003/2007 installs (sometimes the
VISIO and Project 2007 versions were installed, although the Suite may have
stayed at 2003).

Unfortunately, the install is overwriting any Desktop Icons and toolbars
that were in place and in use already. Is there a way to prevent that, and,
just upgrade to the newer versions?
