Default unattended profile setup?

We're wanting to set up a user's Outlook profile using an
exchange account. Possibly using a login script and a run-
once file. Any ideas?

You can configure a prf-file for this. Instructions on this can be found in
the Office Resource Kit. Additionally you can leave a marker in the registry
so you can have the logonscript check that first before executing the script
to make it run only once.
