Because that's the Autocomplete cache which is entirely separate from your Contacts folder...I suspect.... |

Are you stating that when you start typing in the email address in the TO: field, it shows the old email address? What you can try is this: When you start typing in the email address in the TO: field, when it shows the old email address, highlight it and delete it. Then retype in the full email address.
