I would like to change the default length of appointments from 30 minutes to
60 minutes.

right click on the time scale in the day view and choose 60 min... note
that if you use the New button when not in the day or week view you'll get
30 min appointments. That can't be changed.

Rather than using the time selector, type the end time in the field - full
hours can be typed as 9a, others as 9.30a (use period, outlook will format
it correctly). You can usually skip adding the a or p - outlook is pretty
good at getting it right when its during business hours.
