Try:
Tools | Options | Datasheet

Go into Tools - Options - Datasheet to change the default.

I was thinking of having each field have a different font attribute (size,
weight, font)
is that possible?

No.

Use Continuous view instead of Datasheet view for your forms ifyou want
different fonts in different fields.
