Default OK to delete unused Main Identity?

In \\\Local Settings\Application Data\Identities, there are more identities
than I actually have in OE. I think that is because earlier in the year I
deleted Main Identity after importing to another identity. Is it OK to
delete what I believe is the old Main Identity?

Yes. You can delete any identity that you are no longer using. Obviously,
just make sure you are deleting the correct one(s). Viewing the current dbx
files in each one will clarify the one you are now using.

Yes. Because the default Main Identity, created on a fresh install of MS
Outlook Express, has some quirks which don't afflict additional
Identities, I have come to the point where the first thing I do on a
fresh MSOE install is to create a new Identity _before_ setting up any
accounts, then delete the original Main Identity. After that, I just
create accounts in the new (now default) Identity, and/or any additional
Identities, as I see fit.
