Default Drop down form fields using ampersand

I am using Word 2003 and creating a protected form. One of the drop down
fields requires an ampersand. It does not appear properly in the protected
form. Is there special syntax to include an ampersand in a protected form
field? Thanks,

I haven't checked the process discussed here with Word2007 or even Word203
in the last three years to it may be out of date:
