Default How do I set the undo action to unlimited and no time-out

In office 2000 when you used the function 'undo' or CTRL Z as a shortcut this
was unlimited and had no time limit to it.

In office 2003 this function is limited to 17 CTRL Zs and seems to time out
after a few minutes.

Nightmare for teaching. How can I reset this?
