How do I avoid automatic formatting of e-mail addresses to stupid blue type
with stupid underlining?

High-light the email, Insert, Hyperlink, Remove Link.

Default turn off automatic hyperlink Publisher 2003

Or you could change your color scheme to a custom color scheme, and change
the hyperlink (and followed hyperlink) color to match your regular text.
