Default Email Signature in Outlook

By "She replied and attached my message" I presume that you mean that
your original message is quoted in the body or her reply and not as a
separate EML file attachment.

If it's fine in your sent items, there's probably not much you can do
about it.

When she replies, she controls the formatting of the message, not you.
She could be using plain text rather than HTML or if using HTML, she
would be applying her own fonts.
