Default Can Excel pull data out of SQL-Server

Can Excel pull data out of SQL-Server? If so, where can I find documentation
on how this is being done.

Certainly (assuming you have read access to the appropriate database tables).
The menu names differ in different versions of Excel and you didn't say which
you are using.

Data / Get External Data / New Database Query (or similar)
will take you to a dialog in which you are required to select a database.

If the database is not already on the list then select New Data Source and
click OK. Give a name for the database and select SQL server as the driver
and click Connect.

Then provide the information needed to access the particular database.

Having defined the data source you can then select the tables and fields you
want returned
