Default Way to color coding aged messages?

In preparation for deploying the Exchange mailbox manager to purge old
messages my management has asked me to develop a way to color code or flag
old messages for the user (not just sorting by date), so that they can tell
visually which messages will be purged on the next run of the mailbox manager.

It seems that I should be able to do this in the "organize using color"
section of Outlook, but I can't seem to figure out which variable or
statement to put in the filter for "on or before" selection.

If anyone knows a good way to do this, or a good reference for the variables
and statements that can be placed in an outlook filter (the SQL tab is not
available for the "organize using color" feature) it would be much
appreciated.
