Default default picture viewer

When I had to reload MS Office, Windows made Arcsoft's PhotoImpression Photo
viewer the default for when I double click a photo in and email or from
Windows Explorer. I would like to return it to MS Office Picture Manager.
How do I restore that function?

process is similar in Windows Vista.
