Default Pasting From Excel to Word

To deal with the colouring problem for the bitmap, you could select the
bitmap object, then use the transparency tool to mark whatever colour
you want to change. Next, you could place a coloured autoshape behind
the bitmap. This achieves much the same visual effect as re-colouring
the bitmap, but might be easier to do and can be done entirely within
Word.

I suspect the grey boxes you're referring to are nothing more than the
on-screen field shading. Doesn't affect the printed document. You can
turn the field shading off via Tools|Options|View and selecting the
'Never' or 'When selected' options from the Field Shading drop-down
box.
