delete a name from a group without losing everyone?

I have a group of consultants that I e-mail often. When I try to delete one,
the rest of the list is deleted too! How can I update the list People have
asked to be taken off and I need to do it

By "group" do you mean a Distribution List? Click Remove instead of pressing
or clicking Delete.
