Default Single Line of Text in Table Row?

We are setting up forms in Word 2002 and have many rows that can only have a
single line of data. We realize that we can set the row height so that its
height will stay fixed and the table will not "grow". However, we are
converting from WordPerfect and it had a feature that let one designate that
the row was either "single line only" (hide extra text) or "multiple line"
(expand text to fit). If a row was set to "single line only", when the user
pressed "Enter", it functioned as a "Tab" and moved the insertion point to
the next cell, which was convenient for users. Is there an equivalent Word
feature?

There is not an equivalent feature, unfortunately. Setting an exact row
height is as close as you can get.

While I wouldn't call it a feature -- it's far more complicated to
implement than checking an option box -- it is possible to do this in
Word. Have a look at this KnowledgeBase article:
http://support.microsoft.com/?kbid=187985

In addition to changing the function of the Enter key, you will need
to set an exact row height to prevent users from simply typing enough
to make the text wrap.
