Default edit setting to bar skipped line changes??

Issue: (OS= W2K SP4) Whenever I send my carefully edited emails, the
'sent' output produces unwanted line changes in the middle of a line - like
so:

Questions:
What font and editing settings in OE will most likely prevent that behavior?
Will HTML (Rich text) or Plain Text behave the same on this issue?
If I begin editing & email in MS Word, do I need to use the same suggested
OE settings?
