Default Sending email with embedded image...Showing up as all Chinesecharacters to recipients

I have an Exchange 2007 Server with clients running Outlook 2007. I
am using a program called MailList King to send out an HTML email with
an embedded image (about 60K in size) though Exchange as an SMTP.
Several recipients that are mail recipients on the Exchange server
have complained to me that they don't see the image, just a bunch of
Chinese characters. We also have Outlook 2003 users in the domain,
but the ones who have complained so far are using Outlook 2007

The guy who set up the Exchange server said it wasn't an Exchange
problem, so I figure it's some kind of setting in Outlook. We used to
use Outlook 2000 and no one ever had a problem, but for some reason
Outlook 2007, and possibly Outlook 2003, seem to garble the image.

What is the language encoding for Outlook messages? Is the Exchange server
set to strip formatting?
