Default Setting axis limits by reference to fields

My users are not excel-savvy enough to be trusted with
chart formatting controls, so what I'd like them to be
able to do is set the minimum and maximum axis values for
a chart in fields, that can be referenced by the chart. Is
there any way to make this possible?

I think this is your lucky day. Go to www.tushar-mehta.com and click=
=

on AutoChart manager on the left side of the screen.

Hi Geoff -

If they can't even be trained to double click, you probably have worse
problems than you suggest. But anyway, Tushar Mehta has a free addin on
his web site (http://tushar-mehta.com) called the AutoChart Manager,
which allows for updating of a chart's axis scale parameters based on
cell values.
