So I am making the assumption that if I run the 64 bit program, I would have
to uninstall the 32 bit Microsoft Office Professional and reinstall the 64
bit Microsoft Office Professional, right?

When running Windows 7 64 bit, you can install and use either Office 2010 64
bit or 32 bit and either should work. Office 64 bit, however, doesn't play
well with add-ins yet. If you don't have add-ins, you should be able to use
the 64 bit versions of Windows, Office, and the Outlook Connector and all
should work. So the combos are WIndows 64 bit, Office 64 bit, Outlook
Connector 64 bit or Windows 64 bit, Office 32 bit, and Outlook Connector 32
bit.
