Hi Mark,
Is it possible that you have a combination of characters that you
once wanted to be changed to an @ sign.
Check Tools, Autocorrect to see if you have
an @ sign in any of the substitutions wanted.

If you enter, for example, into a cell it will be
recognised as an email address and turned into a mailto: hyperlink.
If you subsequently enter a formula into the same cell, without clearing
the cell first then the hyperlink will still be attached to the cell.
