No, you changed the label, not the category. In Outlook 2003, colors were
associated with labels, not categories. The label is an attribute that can
be changed for an occurrance. Categories, in either Outlook 2003 or 2007,
cannot be changed per-occurrance. Since colors in Outlok 2007 are connected
to the categories, they can not be changed in that version. The behavior
for categories is consistent between the two versions.
