Default Color & Recurring Meetings

We have admins managing multiple calendars in Outlook 2007. They are looking
for an easier way to update recurring meetings which have color categories.
If the entire meeting series has a color assigned and they update one
instance of the meeting, they cannot remove the assigned color unless they
change the ENTIRE meeting series. They are stuck with updating the meeting
series again after they update the one instance. Is there an easier/more
elegant solution to this issue? Thanks!
