Does Outlook have an option for setting work hours based on the day of
the week? I mean... something like Monday is 8 to 5 but Tuesday is 10
to 7? If not, are there any plug ins or work arounds? Lotus had a nice
feature that handled this.

Outlook cannot handle variable start/end times for work days.
