Default email from myself

Incoming email gets the From information from the email headers.
What email program do you use when you are away?
What information is listed for the addresses in the program that you use
when you are away?

Properties, the "From" shows my full name followed by the email address.
On other accounts the "From" field only shows the my email address
(without the account name).

I looked at the mail accounts setup and can find no differences.

Why do some account emails show the account name and others just the email
address? I need to know because I am trying to create filters to filter
out spam seeming to come from me and still let me send myself emails.
