Default Trouble with forms I created in Word 2003

Unrestricted Access is a different kind of protection. Instead, you must
click on Restrict Formatting and Editing. In the pane that opens, click on
Stop Protection. For greater convenience, put the Protect/Unprotect button
(padlock icon and called Lock in the All Commands list) on your QAT.

header/ footer-- practically the entire ribbon in any tab.

Unfortunately, the Legacy Forms palette has everything *except* the
Lock/Unlock button, but you can add this to your QAT through Customize.
Meanwhile, you can access the Protect Document pane from the Review tab
(also from the Developer tab).
