Default sending to a contact who has more than one email address

Not possible, unless you are not using the Outlook Address Book.
The old IMO mode used the Windows Address Book. Switch to Corp/Workgroup
mode if you want to use the Outlook Address Book.

Don't type.
Just click the To: button.
Select whichever address you want from the Outlook

Address Book. That's what
the OAB is for.
