Look at the format property of the table fields and the form controls. If
the symbol is present it will cause the data to be displayed as all caps
regardless of how it was entered.

Access tables may look like spreadsheets but they aren't. Don't use the
tables directly.

Instead, create queries that return the records/fields you want to see,
then create forms based on those queries to display the values. You can
format the controls on the forms to display however you want.
