If you just want to eliminate asterisks then the validation rule could be
Like "*[!*]*"
Or
NOT Like "*[*]*"

Try:
SELECT * FROM MyTable WHERE FieldName LIKE "*[*]*";
to return records from MyTable where FieldName contains an asterisk.
Maybe NOT LIKE "*[*]*" will give the opposite.
