Default Time-scale chart measured in hours & minutes

Doing this shows every reading for the day in one column, regardless of time.
I'd really like to have it spaced out accurately based on time as well. Could
I be doing something wrong?

Combine time and date into a single column, and don't leave out any dates.
Plot as an XY chart. Format the X axis using a date-time format.

I am hoping to get a time-scale chart using hours & minutes, as well as
days.
I know the generic help response is that it can't be done, but it doesn't
seem possible that this need hasn't been addressed. What is the
workaround?
Here is an example of my data set:

Date Time High Blood Pressure Low Blood Pressure
2/5/2007 12:00 AM 182 117
2:00 PM 143 90
6:00 PM 177 112
8:00 PM 166 101
